This Crock Pot Hamburger Soup has it all! Super easy, great flavor, meat, veggies and goes great with a grilled cheese! You really can’t ask for more!

How to Make Hamburger Soup in a Slow Cooker

This Crock Pot Hamburger Soup from Gooseberry Patch’s Foolproof Family Recipes is a wonderful, hearty meal that is a cinch to throw together! When I made it up, we had some friends over. The kids gobbled it up! so that means they devoured their veggies without even thinking about it! You can’t beat a meal that has kids eating their veggies without even blinking and eye!
Ingredients for Crock Pot Hamburger Soup
- 1 lb lean ground beef
- 1 onion diced
- 3 ribs celery sliced, sticks
- 28 oz can diced tomatoes
- 46 oz can vegetable juice
- 3 potatoes peeled and diced
- 16 oz can kidney beans drained
- 4 cubes beef bouillon
- 1/4 teaspoon garlic powder
- 1/4 teaspoon garlic salt
- salt and pepper to taste
Crock Pot Hamburger Soup Notes:
- For this yummy soup, I used Cera, my6 Quart Crock Pot with Ceramic Coated Pot. There is quite a bit of food in this recipe, so I wouldn’t go smaller than a 5 or 6-quart crock pot.
- I made a few changes to this recipe (as always!), so feel free to change it up for your family’s wants and needs. If celery is a favorite at your house, you can add more. If you aren’t fans of potatoes, add in what your family does like and use fewer potatoes. You get the idea.
- While this isn’t a dump and go recipe that has no prep, but it is a simplistic recipe, so don’t be afraid of it! It is super easy and delicious! You can even use our Make Ahead Ground Beef to make a quicker prep.

Ingredients
- 1 lb lean ground beef
- 1 onion diced
- 3 ribs celery sliced, sticks
- 28 oz can diced tomatoes
- 46 oz can vegetable juice
- 3 potatoes peeled and diced
- 16 oz can kidney beans drained
- 4 cubes beef bouillon
- 1/4 teaspoon garlic powder
- 1/4 teaspoon garlic salt
- salt and pepper to taste
Instructions
Put your ground beef, onion and celery in a large skillet and brown over medium heat, drain
Put your ground beef mixture in your crock pot
Add in your your tomatoes (with their juices), vegetable juice, potatoes, drained kidney beans, bouillon and seasonings
Stir well
Cover and cook on low for 8-10 hours or high for 4-6 hours, stirring occasionally, until the potatoes are tender

I haven’t tried this with vegetable broth. If that is your preference, you can give it a try, but it will change the flavor of the soup quite a bit. If you give it a try, let me know how it goes!

LOVED IT BUT I HAVE A QUESTION…IF I WANT TO MAKE JUST 4 SERVINGS (THIS IS REGARDING ALL RECIPES) WHEN IT SAYS .13 T OF SOMETHING, HOW DO YOU MEASURE STUFF LIKE THIS. SAME WITH MEAT. DO YOU CONVERT TO GRAMS AND GO THAT WAY? I COOK THE FULL RECIPE AS I HAVE NO IDEA HOW TO CONVERT STUFF LIKE THIS OR HOW.

my dad used to make this years ago on the stove!! I like using the crock and substitute pasta sauce (garden or marinara) instead of vege juice!

Been making for years. Don’t do the beans tho. Sometimes I add a handful of macaroni about 20 mins. towards the end of cooking time. Never tried in crock pot. Great idea! You can make it even quicker using can of mix vegs.Reply

Hi Krista!In my grocery store, the vegetable juice is right beside the tomato juice. I used the generic, but I am sure that V8 makes one too. Enjoy!

Hi Catherine!I used Russet potatoes. Since this cooks for a longer time, a harder potato works great! Enjoy!
