My favorite daughter had my sweet, little grandson’s blessing at her church recently. We invited family and friends to join us at our house for a brunch following the service. We expected more than 40 guests, so Jenn and I spent lots of time in the kitchen baking up delicious food for the big day.

We made mini muffins so everyone could try each of the flavors. We baked two batches of three different muffins:Pumpkin Chocolate Chip,Banana Nut with Cranberries, andBest Blueberry Streusel Muffins. When we finished we’d made 18 dozen mini muffins and my freezer was overflowing with muffins. (One of these days I’m going to buy a second freezer.)

The muffins froze well, but the pumpkin and banana muffins were a little tacky on top after defrosting, so I put them on a baking sheet and put them under the broiler for a minute to reheat the tops. The mini muffins only took about 8 minutes to bake.

Bacon and Potato Frittatais a favorite breakfast of ours. We whipped up four of these frittatas the day before the blessing and double wrapped them in aluminum foil. I sent my husband home from church a bit early to pop all four of them in the oven at 350º for 30 minutes.

I was so impressed with how nicely the frittatas reheated. I had thought about freezing them, but Kalyn saidthe texture is better when it’s just refrigerated. Thanks Kalyn. They tasted freshly made and I didn’t have a slice left.

Next on our menu was Strawberry Yogurt Parfaits. I found aStrawberry Sauce for Yogurt, Ice Cream, Pound Cake & More!recipe on Food.com, which was posted by Kristen, Dine and Dish. We layered it with strawberry yogurt andtopped it with homemade granola.

I purchased four dozen mini croissants from Sam’s Club and served them with homemade strawberry and blackberry jam. We rounded out the menu with fresh fruit and juices.

It was a wonderful day and we feel so blessed to have this little angel join our family.
