Gluten intolerance is increasingly being identified as one of the main allergy these days. Hence, I get asked about gluten free recipes. There are numerous such recipes available. I have a few gluten-free recipes on the blog. However, this amaranth paratha recipe is the simplest and easiest. People call Amaratha paratha by other names too like Rajgira or Chaulai Paratha.

What is amaranth flour

I will call amaranth as cousin of quinoa. It falls under the category of cereals, but this flour is pseudocereal, just like buckwheat. You can cook it like rice too.

Amaranth is exceedingly versatile and I will call it superfood. Amaranth is nutritious and is gluten-free. Brilliant source of protein, micronutrients, fibre. It is also a great source of manganese, magnesium, phosphorus, iron, and antioxidants. Amaranth flour is made from amaranth.


People on gluten-free diet normally eat Amaranth. Likewise, people observing fast (hindu fasting / Navratri), in indian-subcontinent, eat it.

This paratha is vegan friendly as well. To make this paratha / flat bread, requires 3 ingredients. These ingredients are namely amarantha flour, oil and salt. You can also add boiled potato in the amaranth flour.

I normally make this paratha during fasting days.

Method to make amaranth paratha

  • In a wide pan, take amaranth flour and add salt. Mix well. Now with the help of lukewarm water, knead it into a soft dough.
  • Divide the dough into 5 parts and make balls of it. Take one ball and flatten it in between your palm. Apply little dry flour and roll it into a circle of 4 cm diameter.
  • Heat a flat pan/tava over medium heat and put this rolled parantha over it. Turn over in 2-3 minutes and apply oil to this side. Turn over again and apply oil to this side as well. Now roast it for 2-3 minutes with few turning over in between.
  • Take it out and keep it in a pan. Make rest of the parantha similarly. Once all done, Serve them hot.

Tips for best paratha

  1. Don’t make the dough too soft otherwise you won’t be able to roll them.
  2. Don’t make the paratha too thin as it will break while transferring them on to pan.
  3. Knead the dough for few good minutes as that will help in rolling them nicely.
